Before the lights come on

The alarm rings while most of the city is still asleep. By 4:00 AM, our team has already tied on aprons, switched on the ovens, and checked yesterday's dough that's been fermenting overnight.

The bakery is quiet for only a few minutes. Soon the sound of mixing bowls, timers, and trays fills the room as everyone settles into their routine.

4:00 AM – Preparing the first bake

Our sourdough is the first priority every morning. The dough is divided, shaped by hand, and placed into the oven while it's still cool outside.

Fresh croissant dough comes out of the fridge, ready for its final proof before baking.

What happens next?

While the bread is baking, another team begins laminating pastry dough, filling cinnamon buns, glazing cakes, and preparing sandwiches for the lunchtime rush.

Everything overlaps. Timing is everything. If one stage is delayed, the entire morning shifts with it.

The smell everyone talks about

There's a moment around sunrise when the bakery fills with the aroma of fresh bread, butter, and caramelised pastry. It's impossible to describe properly, but everyone who visits remembers it.

That smell isn't created by shortcuts or artificial flavours. It's the reward for slow fermentation, quality ingredients, and hours of careful work.

Why we start so early

People often ask why we don't simply bake later in the morning.

The answer is simple: bread is always at its best when it's fresh from the oven. Starting before dawn means every customer gets warm loaves, flaky pastries, and cakes that were finished only moments before they arrive.

Good baking can't be rushed, and neither can our mornings.

A small team with one goal

Every baker has their own station, but everyone shares the same goal: making sure the first customer receives exactly the same quality as the last.

Some shape dough, some decorate cakes, while others prepare the display before sunrise. It's a routine we've refined over more than a decade, and one we're proud to repeat every morning.

Before we unlock the door

By the time the clock reaches 6:30 AM, the shelves are full, the coffee is brewing, and the first regular customers are already waiting outside.

For them, it's the beginning of the day.

For us, it's the result of several hours of work, patience, and the simple belief that every great morning starts with fresh bread.
